BLACK BEAN PATTIES

I found a way to have healthy burgers any night of the week!

I've been craving burgers lately! But healthy ones hehe. So I created these yummy black bean burger patties- full of protein + complex carbs. Then paired them with a protein packed burger bun!

INGREDIENTS:
  • 1 garlic clove minced
  • 1/2 red onion, diced
  • Jalapeños, diced
  • 1/3 cup oats, finely ground
  • SPICES: 2 Tbsp ground cumin, 1/2 teaspoon paprika + black pepper
  • 2 eggs
  • 1 tbsp ground flax + 3 tbsp water
  • 1 carrot 
  • 1 small red capsicum
  • 1 cup cooked quinoa (microwave packet one will work if you want to make it quicker!)
  • 1 can black beans, mashed
  • 1 small tin of corn
  • 100g mashed sweet potato

I made burger buns with Protein Bread Co. protein bread mix- made into burger buns. Get the recipe here! But I made it into 10 bread rolls instead of 6!


METHOD:
  1. Heat the oven to 180°C. Line a tray with baking paper.
  2. Combine ground flaxseed meal with water, mix and pit it in the fridge to set. (This is like a vegan 'egg' because it gels the mix together!)
  3. In a small fry pan with olive oil, sauté the onion, garlic + jalapeños until cooked through.
  4. Chop the carrot + capsicum up into medium chunks. Put them in a food processor and pulse until they're shredded. Don't pulse too much otherwise it'll become too watery!
  5. Whisk eggs so they're easier to mix in. Mix the oat flour and spices together.
  6. In a large bowl combine everything together. I did this by hand and it was alot easier! 
  7. Make 8 patties by taking a chunk, slightly rolling it and flattening it out on the tray. The thicker you make them- the more like a burger pattie! The thinner- the crispier. Both are super yummy I did thin + thick ones! 
  8. Bake in the oven for 30 minutes. Making sure you flip them half way!
ENJOY!!!!!!!! P.s. it seems like there's heaps of ingredients, but this one is actually so easy you literally just mash everything together!!! And for the sweet potato, Mum always cooks them in the microwave to make mashed sweet potato
