These days I'm all for convenience and anything you can chuck in a pan at once and voila it's done! This dish is exactly that.
2 staples in my house for a healthy meal are;
1. Cauliflower rice (just from coles vegetable section)
2. Frozen veggies.
You'll need both for this dish!
For the cauliflower fried rice in the picture i added chicken for extra protein- of course you can include whatever you like! If you're vegan you can simply skip the eggs/ chicken. Overall you could add 1 egg, or 2 or 3, chicken, prawns, any veggies you like.
That's the great thing about it- it's so easy and tasty- SOOOOO healthy and flexible! You can add or take anything and adjust the calories drastically. It can be such a high volume/ filling meal for low calories if you're trying to use up the rest of your macros:)
