OPTIONAL: boiled egg for protein, falafels + hommus:~)
This isn't really a recipe, but a quick, healthy, yummy dinner I'd do in 10 minutes! It's super filling and the zoodles taste sooooo good. Add any protein to it to make it a meal:)
1. Slice the capsicum, chop up the asparagus spears and julienne the carrot.
2. In a large fry pan on medium heat add 1/2 Tbsp of coconut oil and all the veggies. Sauté for around 3 minutes or until veggies are moist + soft. Pour over some teriyaki sauce (i usually just wing it) and mix through.
3. Turn the heat off and in another fry pan add the zoodles and the rest of the coconut oil. Cook for 3-5 minutes or until zoodles soften. Add in some teriyaki sauce and cook for another minute.
4. Assemble in bowl + enjoy!
